Somewhat Easy Make Your Own Hot Pockets formally Pot Pies

Alright so the title of this post is almost as long as the cooking process took with this recipe. I recently found a chicken pot pie recipe on Pinterest so I thought I would give it a whirl. Well I got home from the grocery store and realized I forgot chicken so into the freezer I went and pulled out a sirloin steak.

First I seared it for a little while on the stove top.

Followed by an hour in the oven at 200.

While all that was going on I decided to make the breading mixture. The reason I have changed the name to Hot Pockets is that there really isn’t that flaky crust followed by a soupy texture. I thought I would test out two breading crusts: Pancake mix vs. Cornbread…. I mixed 7.5 oz of each with 1/2 cup milk and 2 eggs…. On my stove top I used a cheddar broccoli rice packet and busted out a bag of frozen corn, which I left frozen. I decided to add a cup of shredded cheese last minute, but to be honest I didn’t really notice it.

Next I cut my steak up, more like tore it cause it was still rare to medium rare. I put a tablespoon of batter in the cupcake pans, followed by a piece of steak or two (I would advise smaller pieces for little ones), then the corn and rice mix, and topped off with a tablespoon of batter.

I then baked them at 375 for a half hour.

I would not make these with cornbread again, they fell apart way too easy, but the pancake ones popped right on out. They were also quite filling! So we bagged up the rest that were not falling apart and threw them in the freezer. Easy work meal! I am also going to try to make breakfast ones and they really cost alot less making them yourself :0
